Beef Stew is one of my favorites. I love all kinds of soup and when I can have a classic comfort meal ready in no time, that is a huge win for me. I can start the dinner when I get home after a busy day, set it to cook, and clean up the kitchen. Before it is done, I have time to clean up, get the plates and cut the bread and still talk with the kids about their day.
Instant Pot Beef Stew
3 red potatoes; diced
1 cup carrot chips
3 stalks of celery; diced
1 lb beef stew meat
1 large white onion; diced
1 bay leaf
2 teaspoon salt (may add more to taste)
2 teaspoon pepper
1 container beef broth
2 teaspoons maggi (This is similar to a soy sauce. Feel free to substitute it if you don’t have it on hand. )

Turn on pot to saute. Add in celery, potatoes, beef, and onion. Saute meat until lightly brown on outside.
Set pressure cooker or instant pot to high pressure. Add in carrots, spices, maggi, and beef broth. Fill with water to max level. Cook on high pressure for 30 minutes. Let pot release naturally.
