I love me some lemon cake. Actually, I love all lemon desserts. I have since I was a kid and my great grandmom would make homemade lemon meringue pie. It was one of my favorite things she would make. The lemon frosting on this cake is actually made from her homemade lemon pie filling. So I can not help but think of her every time I make lemon cake.
How to Store Lemon Cake
Since this cake has a lemon frosting on top that contains Cool Whip, you are going to want to keep in the refrigerator. This helps to keep the icing from going bad. While storing a cake in the refrigerator isn’t always the best because it makes the cake dry out faster, this cake never lasts long enough in my house for it to tastes dried out. Be sure to wrap it tightly or store in an airtight container.
Can Lemon Cake be Frozen
Yes. If you find that the cake will go bad before you have a chance to eat it all, you will want to freeze the cake. I recommend freezing the cake first, then cover it tightly in an airtight container or plastic wrap. This prevents the lemon frosting from sticking. When you are ready to thaw the cake, remove the covering and let thaw in the refrigerator. Believe me, you don’t want to lose any of that delicious frosting.

- 1 1/4 cup flour
- 1 1/2 cup sugar
- 3 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup butter flavored shortening
- 1 cup skim milk
- 1 teaspoon vanilla
- 2 tablespoons concentrated lemon juice
- 3 eggs
- Lemon Frosting
How to Make Lemon Cake
Preheat oven to 350
Sift the flour, sugar baking powder and salt together. Beat together shortening, milk, and vanilla with an electric mixer. Add lemon juice and eggs and beat together for 3 minutes on high.
Grease a 13*9 baking dish. Pour batter in and bake for 45-50 minutes.
The cake is done when a toothpick comes out clean when inserted.
Once the cake has cooled completely, top with lemon frosting.
