If someone had told me a few months ago that I would be eating Greek Yogurt, I would have laughed. I like yogurt, but only the sweet and fatty kind. So that is obviously out. The Greek Yogurt is bitter and I never thought I would come to love it, but I always have at least one container in my fridge at all time. Not only have I learned to love it, so have the kids. Since I started making this healthy chocolate mouse, I have discovered it is actually a great option for Serenity too. She struggles to get enough protein each day. Since becoming a vegetarian and start cheer again, she needs to make sure she is getting 50 grams of protein a day. For a fussy eater, that can be hard. So when she eats this chocolate mousse, she is getting 18 grams just from the yogurt. When I mix it together with my secret weapon, she is getting 29 grams of protein. While I use a light, no sugar added powder for mine, for hers I choose a high protein powder, which is making this something she is happy to eat.
