No. There is no fish or fish eggs like people think of when they are eating caviar. This is called Cowboy Caviar because it is made of small chunks, kind of like the caviar is made of small fish eggs, but it is veggies and beans.

One of the things that I love about making this as a picnic side dish is that it holds up well, even on warm days. There isn’t anything that will spoil like the case with some pasta salads or potato salad. This recipe makes 10 servings. Even with the Italian dressing (use fat-free), this is only 1 point per serving, It is so good as a dip or as a side dish. Each serving is about 1 cup.

- 3 Roma tomatoes seeded and diced
- 2 red peppers diced
- 3 garlic cloves minced
- 1 can jalapenos Diced – I prefer canned jalapenos
- 3 stalks Green onion
- 16 ounce can of black beans drained and rinses
- 16 ounce can of black-eyed peas drained and rinsed
