Similar to a healthy stuffed chicken parmesan, except instead of a traditional sauce, this recipe has fresh cherry tomatoes. This easy meal is ready in about 30 minutes and is better than anything you will get with take out.

Ingredients
- Nonstick Cooking Spray
- Boneless, skinless chicken breast
- Italian seasoning
- Salt and black pepper
- Unsalted butter
- Chicken broth
- Multi-colored cherry tomatoes
- Fat Free Mozzarella cheese
- Red pepper flakes
How to Make Mozzarella Stuffed Chicken Breasts
Start with a 425 degree preheated oven.
Spray an oven proof skillet, like a cast iron skillet, with nonstick cooking spray.
Then spray the chicken breast with the cooking spray and then sprinkle both sides of the chicken with Italian seasoning as well as salt and pepper. Place the chicken in the pan over medium heat.
Sear the chicken for about 4 or 5 minutes per side or until it has gotten a golden crust.
Remove the pan from the heat and add the butter, chicken broth, and cherry tomatoes.
Top the chicken with mozzarella cheese, crushed red pepper flake, and the remaining Italian seasoning. Add salt and pepper if needed.
Put the pan in the oven and roast for 15-20 minutes, or until the chicken is cooked and the cheese is melted.
Remove the baked chicken from the oven and let it rest for 5 minutes.

Mozzarella Stuffed Chicken Breast
Ingredients
- Nonstick Cooking Spray
- 2 lbs. boneless skinless chicken breast
- 1½ T. Italian seasoning divided
- Sea salt and black pepper to taste
- 1 T. unsalted butter
- ¼ c. chicken broth
- ½ c. multi-colored cherry tomatoes quartered*
- 8 oz. fat free Mozzarella cheese
- ½ t. red pepper flakes
Optional garnish:
- Sprigs fresh basil
Directions
- Preheat oven to 425°F.
- With nonstick cooking spray, cover a large, oven-safe skillet over medium heat.
- Also, spray the chicken breast sprinkle both sides with one tablespoon Italian seasoning. Season with salt and black pepper, to taste, and transfer to the pan over medium heat.
- Cook for 4-5 minutes per side, or until the chicken develops a golden crust. Remove from heat and add butter, chicken broth, and cherry tomatoes. Top each chicken breast with mozzarella cheese and sprinkle with crushed red pepper flakes and remaining Italian seasoning. Season with additional salt and black pepper, if desired.
- Place the pan in the oven and roast for 15-20 minutes, or until chicken is cooked through and the Mozzarella is melted. Remove from oven and allow chicken to rest for 5 minutes.
- To serve the baked chicken, spoon any leftover suace onto the baked chicken and enjoy!
