Air Fryer Breakfast Taquitos
I am always looking for easy breakfast ideas. I like to make a large batch that I can store in the refrigerator or the freezer so that I can take them out and have them in a hurry. This recipe makes 16 breakfast taquitos which is perfect for feeding the whole family or having a make-ahead breakfast.

Do I Use Flour or Corn Tortillas?
I am using flour tortillas. I prefer the texture to corn, but you can swap the flour for corn if you prefer. It changes the nutrition count but that is the only change it causes in the recipe.
What Goes with Breakfast Taquitos?
For most people, this will be considered a complete breakfast. If you want to make sure you have vegetables in your breakfast, you can add sautéed vegetables like peppers or spinach to your taquitos or pair this healthy breakfast idea with fresh fruit.
Can These Be Made in the Oven
You can easily make these breakfast taquitos in the oven. You will make the taquitos the same way but you will bake them in the oven. Typically this is in a 400-degree oven for about 7 minutes. Since the food inside of the taquitos is cooked, you are only browning the tortilla and getting it nice and crispy.
How to Reheat Breakfast Taquitos
Some people like to reheat their taquitos in the microwave. While this is an option, I personally like to have mine crispy. I will usually toss them back into the oven for a few minutes or I will toast them in a frying pan on the stove.

- Onion powder
- Garlic
- Salt

- Low carb flour or whole wheat tortillas – fajita size
- Fat Free shredded Mexican blend or cheddar cheese
- I Can’t Believe It’s Not Butter
How to Make Air Fryer Breakfast Taquitos
In a large skillet, cook sausage until it is no longer pink. Drain. Add garlic and cook until soft. Season with onion powder, salt, and pepper.
In a bowl, whisk eggs and pour into the skillet and cook until eggs are scrambled. Remove the skillet from the stovetop. Add mixture to a bowl and set aside.
Add tortillas to the microwave for 20 seconds. This softens them and makes it easier to roll them. On a flat surface, top a tortilla with 2 tablespoons of the skillet mixture. Top with a sprinkle of cheese. Roll the tortilla tightly and place it in the baking dish. Brush with melted butter. Repeat until the remaining tortillas are filled.
Pre-heat Air Fryer to 350° for 1 minute. Bake for 3 minutes and turn, and bake for an additional 2-3 minutes or until tortillas are golden brown and crispy.
Serve with your favorite toppings!

- ½ teaspoon pepper
- 6 large eggs
- 16 small low carb flour or whole wheat tortillas
- 1 cup fat free shredded Mexican blend or cheddar cheese
- 2 tablespoons I Can’t Believe It’s Not Butter Melted
Directions
