🔪 How to Make Chorizo and Potatoes
Position your oven rack in the center and preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper or a Silpat™ mat, then set it aside.
In a medium bowl, combine the sliced onion, 1 tablespoon of olive oil, and ½ teaspoon of garlic powder. Add salt and pepper to taste, then toss everything together. Set the bowl aside.
Place the chorizo sausage links on the prepared baking sheet. Spread the seasoned onions around the sausage in an even layer, keeping things from overlapping. Set the sheet pan aside for now.
Using the same bowl from the onions, add the potatoes. Drizzle with the rest of the olive oil, then mix in the smoked paprika, tomato paste, and the remaining garlic powder. Season with salt and pepper, and toss until everything is well coated.
Spread the seasoned potatoes on the baking sheet with the sausage and onions. Make sure everything is in a single layer to help it roast evenly.
Roast in the oven for 35–40 minutes, flipping the sausage, onions, and potatoes after about 15 minutes. The potatoes should be golden and fork-tender when finished.
Take the sheet pan out of the oven. Transfer the potatoes to a bowl and toss with fresh chopped parsley. Slice the sausage and serve with the roasted onions and potatoes while everything is hot. Enjoy!
