    This Lemon Parfait with Strawberry Cheesecake recipe is perfect for you when you are craving something sweet!

    This recipe is easy to follow and only takes a few minutes to make. Plus, it’s delicious and sure to satisfy your sweet tooth. With no oven time, this cheesecake lemon parfait has so much flavor and takes almost no time.

    With layers of creamy lemon curd and rich strawberry cheesecake, this dessert is sure to impress your friends and family. They won’t be able to resist trying a bite.

    What is a Parfait

    A parfait is a French dessert that typically consists of layers of flavored cream, fruit, and cake or cookies. However, there are many different variations of this classic dessert.

    In this recipe, we’ve made a lemon curd parfait with layers of fresh strawberries, cheesecake, and tart lemon curd. It all comes together to be sweet and tart, rich and creamy and simply amazing.

    What is lemon curd

    Lemon curd is a tart and tangy sauce that is made with fresh lemon juice, sugar, eggs and butter. It’s thick and velvety smooth, making it the perfect topping for this parfait.

    What is the difference between lemon curd and lemon pie filling

    Lemon curd is made with fresh lemon juice, sugar, eggs and butter. It’s thick and velvety smooth, making it the perfect topping for this parfait. Lemon pie filling is made with canned lemon juice, water, sugar, flour or cornstarch and sometimes includes a small amount of zest. It’s thinner in texture and not as tart as lemon curd. Lemon pie filling, especially homemade lemon pie filling can be used interchangeably with lemon curd.

    Can I Make This Cheesecake Parfait Ahead of Time

    Yes, you can make this parfait ahead of time. Simply layer the ingredients in a jar or container and refrigerate in an airtight container or wrap with plastic wrap until you’re ready to serve. I do not recommend freezing this parfait as the cheesecake will become dense and the strawberries will release too much liquid.

    What Goes With Lemon Parfait

    There are a few things that go great with this lemon parfait recipe.

    First, if you want to keep it light and refreshing, serve it with a side of fruit. I love pairing it with some fresh berries or slices of kiwi.

    Second, if you’re looking for something a little more indulgent, serve it with a dollop of whipped cream or a scoop of ice cream.

    Another idea is to serve the lemon curd parfait along side scones or biscuits.

    Last, if you want to add more crunch, top it with a few more graham cracker crumbs or some chopped nuts.

    Variations to Strawberry Lemon Cheesecake Parfaits

    While this recipe is delicious as-is, there are a few ways you can change it up to suit your taste.

    If you don’t like strawberries, feel free to use another type of fruit. Raspberries, blueberries or blackberries would all be great substitutes. Blueberries are one of my favorites because lemon and blueberries are amazing together.

    If you want a more traditional parfait, you could use ladyfingers or pound cake in place of the graham crackers.

    More ideas are to layer in some mini chocolate chips, toffee bits, or even a little coconut.

    I also love the idea of adding a layer of chocolate ganache or a drizzle of melted chocolate on top.

    Tips for Make Strawberry Lemon Parfait

    Put the graham crackers in a plastic bag to make it easier to crush them. Use a rolling pin over the baggie. You can also crush them directly in the package, being careful not to break the back. Continue until they are in small pieces.

    You can also crush them in a food processor.

    Make sure the cream cheese is at room temperature.

    Use vanilla extract in place of vanilla bean paste if you don’t have it.

    If you would like to make for more people, you can keep the same amount of strawberries and graham crackers, but put less in each cup, and double or triple the cream cheese mixture.

    How to Make WW Lemon Cheesecake Parfaits

    Making these lemon curd parfaits doesn’t have to take a lot of points. You can use my sugar free lemon curd, use fat free cream cheese, low fat graham crackers and sugar substitute and these parfaits come in at 6 points per parfait. For 2 parfaits, I am using about 1/2 cup of sugar free lemon curd.

    Ingredients

    • Cream cheese
    • Powdered sugar
    • Vanilla bean paste
    • Graham crackers
    • Strawberries
    • Lemon Pie Filling or Sugar Free Lemon Curd

    How to Make Lemon Curd Parfait

    Prep:

    Using a stand mixer with a whisk attachment or handheld mixer, Beat cream cheese, vanilla, and powdered sugar together in a medium bowl for about 1 minute. Scrape down the bown with a rubber spatula.

    Wash, dry and cut strawberries.

    Prepare the lemon pie filling.

    Putting together:

    Sprinkle in a layer of crushed graham crackers.

    Add a few tablespoons of lemon pie filling.

    Sprinkle more graham crackers.

    Spoon in the cream cheese mixture and use the back of the spoon to spread.

    Add strawberries.

    Optional: Garnish with whipped topping or whipped cream, some crushed graham crackers, lemon zest and a strawberry.
