    Since hubby and I have been trying to lose weight, which is going great, we were both worried about falling off the wagon during the holidays. It is hard because my weakness is dessert. All desserts.

    During the holidays, I make pies about once a week. That is not good for my waistline. So this year we are working on making healthier desserts.

    My goal is to make healthier versions of all my favorites. Introducing crustless pumpkin pie. 

    Is Pumpkin Healthy?

    Actually, pumpkin is amazing for you. It is packed with a lot of vitamins and nutrients and is filled with fiber. It is low calorie, low carbs and just all-around great for you. 

    How is this a Healthy Pumpkin Pie Recipe?

    Most of the bad for you things in desserts is the sugar. It doesn’t matter what healthy eating program you do, sugar is enemy number 1. And for good reason. So this healthy pumpkin pie recipe is using a sugar substitute instead of real sugar.

    Next comes in the carbs. A traditional pumpkin pie has a flaky crust that is filled with white flour. Again, it doesn’t matter what plan you follow, this is basically a no-no.

    If you are following a low calorie or a low-fat diet, you want to avoid the butter that is in the crust too. Basically what makes a pumpkin pie unhealthy, besides the sugar, is the crust.

    Since I am eliminating the crust, this easily becomes a healthy pumpkin pie.

    How Many Weight Watchers Points in Low Calorie Pumpkin Pie

    My favorite part about this low calorie pumpkin pie is that it comes in at 0 Weight Watchers Points. That means if you are following Weight Watchers, this is a guiltless treat. How awesome is that?

    Easy Crustless Pumpkin Pie Ingredients

    • 1 (15 oz) can 100% canned pumpkin purée
    • 1/3 cup granulated sugar substitute 
    • 1 tsp cinnamon
    • 1/2 tsp nutmeg
    • 1/2 tsp vanilla extract
    • 1 tsp pumpkin spice
    • 2 large eggs
    • 8 oz. unsweetened almond milk

    How to Make Crustless Pumpkin Pie

    3. Pour into the prepared pie dish.

      Looks yummy. When you say prepared pie dish, what is meant by that? Do you give it a spray with cooking spray before putting the batter in?

        Yes. When you preheat your oven, lightly spray your pie plate and set aside.

      I made this for Christmas, it fell apart when trying to get pieces out. Yes I baked it according even longer then it said.
      It’s missing something, not sure what but it doesn’t taste like a pumpkin pie.
