Easiest Lemon Cupcakes Ever
These are truly the easiest cupcakes ever. You don’t have to worry about adding the eggs and all-purpose flour, separating the dry ingredients, or measuring the baking powder
Does soda and cake mix work?
Yes, soda and cake mix work together to create a deliciously moist and fluffy cupcake. The Sprite adds a light and refreshing flavor, while the cake mix provides the perfect base. You can use any type of soda for this recipe, but I prefer Sprite because it doesn’t add any additional flavors.
My favorite combination of cake mix and soda is lemon cake mix and Sprite. However, technically, you can use whatever flavor of soda that you like and whatever flavor of cake mix you like. There are endless combinations.

What makes a moist cupcake?
These lemon cupcakes are so moist because of the Sprite. The soda adds moisture to the cake, which results in a deliciously moist cupcake.
What Can You Fill Lemon Cupcakes With?
I am not filling these Sprite cupcakes with a filling but that is because I am trying to keep them lower calories. However, I have filled them with my lemon pie filling. In order to fill the lemon cupcakes with lemon filling. For lemon-filled cupcakes that are still lower in calories and sugar, you can use sugar-free homemade lemon curd.
In order to fill these cupcakes with filling, I use the same technique as I use to fill my Valentine’s Day Surprise cupcakes. These pinata-style cupcakes are the easiest way I have found to add the lemon pie filling.
Can you put lemon juice in the cupcake batter?
If you find that there just isn’t enough lemon flavor in a lemon cake and lemon soda, you can add more lemon flavor. You can add some fresh lemon juice, lemon juice concentrate (I prefer the powder), or even lemon extract. You can also use the lemon zest for a brighter burst of lemon
If you are adding lemon juice, replace some of the soda with the lemon juice.
Why is my cake moist at the top?
Soda cakes, in general, tend to be moister at the top. I am not sure why this is but it is just how they are. If you find that your cake is too moist at the top, you can always bake it for a few minutes longer.
What is the best way to store lemon cupcakes?
Lemon cupcakes without frosting are best stored in an airtight container. I like using a cupcake holder. However, when you add the lemon cream cheese frosting, you will want to store these Sprite cupcakes in the refrigerator.
Can you freeze lemon cupcakes?
Yes, you can freeze these cupcakes. These soda cupcakes freeze really well, with or without the frosting. When freezing the lemon soda cupcakes without the frosting, wrap each cupcake well in plastic and then place them in a freezer bag.
If you are freezing the frosted cupcakes, place the cupcakes on a plate in the freezer first. This freezes the lemon cream cheese icing so it does not stick to the plastic wrap. After about an hour, wrap the lemon cake cupcakes in plastic and place them in the freezer bag.
When you are ready to thaw the cupcakes, remove the plastic wrap first, then place the cupcakes in the cupcake holder on the counter until thawed.
Can They Be Made Gluten Free
It is easy to make these soda cupcakes into gluten-free cupcakes. You will want to use a gluten-free cake mix. I have seen gluten-free cake mix at Walmart and Target but my local grocery stores are hit or miss if they have them. In those cases, you can order the gluten-free cake mix online to make Gluten-Free Lemon Cupcakes.
Low Carb Lemon Cupcakes
If you wanted to make these low-carb lemon cupcakes, you would need to find the new Keto Cake Mixes. There are lots of ones on the market, but some are very expensive. I have made this using the Duncan Hines Keto-Friendly Yellow Cake. It is found in-store and online and it doesn’t cost a fortune like some of the other ones that I have seen. You will also need to use sugar-free Sprite. Using diet Sprite, the low carb cake mix, and then making the lemon cream cheese frosting with a powdered sugar substitute, like Pure Cane, you can have a low carb lemon cupcake treat.
How to Make these Skinny Cupcakes
If you have visited Our Wabi Sabi Life before, you know that I feature a lot of Weight Watcher recipes, like skinny cupcakes, and recipes that you can enjoy without feeling guilty. At first glance, these cupcakes do not fit into that category, but with a few twists, you can absolutely enjoy 2 ingredient cupcakes without wasting all of your points.
Making these cupcakes exactly as they are written, these cupcakes are 13 points per cupcake. That is regular Sprite, regular cake mix and the lemon cream cheese frosting.
Making the skinny lemon cupcakes without the frosting but otherwise as written, the points come in at 4 points per cupcake.
Using Diet Sprite
The first change you need to make if you want these to be skinny cupcakes is to change the Sprite to Diet or Sugar Free Sprite. This takes a lot of the sugar and calories out of the cupcakes. The low calorie cupcakes come in at 80 calories, without the frosting.
You can stop there and the point count for the cupcakes will be (according to my personal points) 12 points per cupcake.
Using Sugar Free Cake Mix
Next, you can make these cupcakes even lower in points by using a sugar free cake mix. I have never found a sugar free lemon cake mix, so you would need to use a sugar free vanilla cake mix. Then use lemon juice lemon concentrate or lemon extract, like I mentioned above. The points for this is 10 per cupcake.
Using a Sugar Substitute
Lastly, you have to decide about the frosting. The frosting is a lot of points as it is. You can make these frosting with fat free cream cheese, lite butter and a powder sugar substitute, my favorite is Pure Cane.
Making the cupcakes as written but with a sugar free, low fat cream cheese frosting brings the cupcakes in at 16 points per cupcake.
When you make the cupcakes with sugar free cake mix, sugar free, diet soda and make sugar free low, low calorie cream cheese frosting, this low calorie cupcake recipe comes in at 13 points per cupcake.
You can also turn this into diet soda cakes. Instead of making it into cupcakes, you can make one cake and get all the same flavors without the work of scooping cupcakes.

Variations to Soda Cupcakes
There are so many ways to add variations to these cupcakes. First, you can mix and match flavors of cakes with types of sodas. But in addition to that, you can also change up the frosting. Here are some fun ideas to get you started
- The lemon cream cheese frosting can be swapped with lemon buttercream frosting.
- Use chocolate cake with Dr. Pepper or Root Beer
- Make key lime cupcakes by using lemon lime soda and adding green food coloring to the frosting. This has the best citrus flavor.
- Make cherry cola cupcakes by using a chocolate cake mix and adding cherry pie filling to the batter
- Use a white cake mix with Mountain Dew
- Make strawberry cupcakes by using a white cake mix, adding a few drops of red food coloring and adding freeze dried strawberries to the frosting.
- Use an orange cake mix with Fanta Orange Soda
- Make grape soda cupcakes by using a white cake mix and adding grape jelly to the batter
- Try spice cake with root beer or Dr. Pepper for a winter version
- Use a yellow cake mix and add chocolate frosting for a fun twist
- Add a pinch of salt to the top of the cupcakes to offset some of the sweetness.
- Any flavor of cake mix with any flavor of soda – the possibilities are endless!

- Cream Cheese
- Butter
- Powdered Sugar (also called Confectioner’s sugar)
- Milk, half and half or heavy cream.
- Lemon extract
- Vanilla Extract
- Lemon Zest
- Yellow Sanding Sugar
How to Make 2 Ingredient Lemon Cupcakes
Preheat oven to 350F.
Line a muffin tray with cupcake liners and set aside.
In a large or medium bowl, beat together the lemon cake mix and Sprite for 2 minutes. Scrape the bottom of the bowl well.
Scoop the cupcake batter mixture with a ⅓ cup measuring cup into the prepared cupcake liners.
Bake for 25-30 minutes, until an inserted toothpick comes out clean.
Allow the cupcakes to cool completely before frosting.
In a large bowl, beat together the room temperature cream cheese, butter and powdered icing sugar for 2 minutes, then add the vanilla, lemon extract and lemon zest. Beat to incorporate, then add the milk as needed.
Spoon the frosting into a piping bag fitted with a large star tip.
Swirl the frosting onto the cupcakes to form a rose pattern.
Sprinkle a touch of yellow sugar crystals in a crescent pattern on one edge of each cupcake.
