    I have loved strawberry muffins ever since Willow was a baby. When she was young, she went through this phase where she wouldn’t eat anything other than strawberry muffins. She hated baby food and only wanted strawberry muffins. It went on for about 2 weeks. I think I made a batch every day. I wish I would have thought of strawberry muffins in a mug back then.

    One day, a few weeks ago, I was craving strawberry muffins. I went out and bought a large container of strawberries. I didn’t get around to making the strawberry muffins for about 2 days. When I went in to get the strawberries to make muffins, I had 6 strawberries left. Willow still loves her strawberries. That was the day Strawberry Muffin in a mug were born.

    How to Make Muffin in a Mug

    I love how easy it is to make a strawberry mug muffin. What makes it simple is that all of the ingredients go straight into the cup and then you just microwave it. It makes a small portion, perfect for one.

    I have a weakness for desserts in a mug. I have yummy Peanut Butter Chocolate Lava Mug Cake Recipe. Well, really anything in a mug. I oftentimes make a spinach and feta omelet in a mug and I also make delicious sausage, cheese, and eggs in a mug

    It only takes about 5 minutes to make a Strawberry muffin in a mug. And the little effort is so worth it. By subbing out the milk for almond mild, using dairy free butter for real butter, and using raw sugar, this is easily made into a vegan dessert.

    Strawberry Muffin in a Mug

    Ingredients:

    1/4 cup and 2 tablespoons of flour – Keto:  Replace with almond flour 
    2 tablespoons of sugar – Keto and Weight Watchers: Use  Sugar Substitute
    1/4 teaspoon baking powder
    1/4 cup milk Keto: Use Heavy cream Weight Watchers: Use Almond Milk or use The Best Oat Milk Recipe
    2 tablespoons butter (or dairy free butter) Weight Watchers: Use applesauce
    1/2 teaspoon vanilla
    A little over 1/4 cup about strawberries, about 3 strawberries

    Directions:

    Melt the butter
    Mix the flour, sugar and baking powder together.
    Stir in Milk, butter and vanilla.
    Cut up the strawberries. Stir into the batter.
    Pour the batter into a mug and bake for about 2 minutes.
    Be sure to let it cool slightly before eating. It is very hot.

    I try to use a slightly tall mug so that the strawberry muffin does not over flow.
