Looking for a delicious muffin idea? Want a muffin that you can still eat when you are on Weight Watchers? These cinnamon sugar muffins are moist and tasty and will only cost you 2 points.
Since starting Weight Watchers, I have missed just easy to grab foods that aren’t fruit or vegetables. Food that let me feel like I am just eating something without thinking about it. That is why I wanted to have a muffin recipe that I could grab.
2 Point Cinnamon Sugar Muffin
These muffins are topped with a cinnamon butter coating. It takes these muffins over the top. I personally prefer the muffins without the topping, but hubby loves the topping. Either way, with or without the butter topping, these are only 2 point cinnamon sugar muffins, well actually Splenda, but you get the idea.

Ingredients in Cinnamon Sugar Muffins
Muffins
- 3/4 cup Splenda or Stevia equivalent
- 1 egg
- 1 1/2 cups flour
- 2 tsp Baking powder
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- 1/4 cup unsweetened applesauce
- 3/4 cup milk
- 1 tsp vanilla
Topping
- 1 TBSP Land o Lakes Light butter
- 1/4 cup Splenda or Stevia equivalent
- 1/4 tsp cinnamon
How to Make Cinnamon Sugar Muffins
Preheat oven to 350 degrees.
Spray muffins tins with Pam or another baking spray. You can also use cupcake papers.
In a bowl beat together sugar and egg until light in color.
In another bowl, whisk together flour, baking powder, salt, and cinnamon.
Pour into the egg mixture and stir together.
Add applesauce, milk, and vanilla and stir together.
Fill muffin tins to 3/4 full.
Bake for 35 minutes. Muffins will still be slightly soft on the inside. You can bake longer if desired.
Topping
Melt butter.
Mix together sweetener, cinnamon and butter. Brush lightly over the top of muffins.
