Trying to find healthy dinners that taste good and are low in Weight Watchers points can be really hard. Anymore, I swear I don’t even want to look at chicken. But when I can find new ways of making it, then it doesn’t feel like I am eating the same thing every day.

Whenever I can find a simple chicken recipe that the family loves it goes right into the saved recipes. That is what happened with this easy Italian chicken recipe. The family went nuts for it and now I make it all the time.
Can this Italian Chicken Be Made without an Instant Pot
You can easily change this from being an Instant Pot recipe to an oven recipe. To make this recipe in the oven, start by the cooking chicken in a skillet. Instead of adding the ingredients into the Instant Pot, use a casserole baking dish. Baked in 20 minutes at 400 degrees, you have a delicious chicken dinner.
Can Italian Chicken Be Made with Chicken Thighs
This recipe for Italian Chicken breast can easily be made with chicken thighs. You will need to adjust the cooking time slighty and this will change the WW point values but some people just prefer chicken thighs as they have more flavor.

Ingredients in Italian Chicken Recipe
- Extra virgin olive oil
- Red onion
- Baby Portobello mushrooms
- Boneless, skinless chicken breasts
- Salt and black pepper
- Chicken broth
- Garlic powder
- Fresh thyme leaves
- Fresh rosemary leaves
- Fresh rosemary
- Fresh parsley
How to Make Italian Chicken with a Mushroom Sauce
Add the olive oil to Instant Pot and select the Sauté function. Set to high and once the display reads “hot,” add red onion and Portobello mushrooms. Cook, stirring frequently until onions soften and mushrooms start to release their liquid, approximately 5-6 minutes. Transfer veggies to a bowl and set aside.
Season chicken breasts with salt and black pepper on both sides. Working in batches, if necessary, add chicken to the Instant Pot without overcrowding. Brown on both sides, approximately 2-3 minutes per side.
Remove browned chicken from unit and repeat the process with remaining chicken breasts.
Return mushrooms and onions to Instant Pot and add chicken broth, garlic powder, thyme, and rosemary. Stir to combine.
Place the metal trivet that comes with the Instant Pot® into the cooking container. Place chicken breasts on top of the trivet and cover. Lock the lid and set the pressure valve to “Sealing.” Press the “Manual” button and adjust setting to “high.” Set cook time to 10 minutes.
When cook time is finished, allow pressure to release naturally for 10 minutes, and then do a quick release for any remaining pressure. Turn the unit off and remove lid. Transfer chicken to a serving platter and rest for 5 minutes.
Once the Italian chicken is cooked, serve immediately with some of the mushroom sauce spooned over each chicken breast. Enjoy!

Ingredients
- 1 tsp extra virgin olive oil divided

- 4 6- oz. boneless skinless chicken breasts, pounded to ¼” thick
- Sea salt and black pepper to taste

- 1 t. garlic powder
- 2 T. fresh thyme leaves
- 2 T. fresh rosemary leaves chopped
- 4 sprigs fresh rosemary
- 3 T. fresh parsley chopped
